Original Blend
Heat · Medium-Hot
The one that started everything — and the Sweet Whiskey Heat that took Best in Show. Scotch bonnets up front, sweet bell peppers rounding out the edges, and that slow fermented depth underneath it all.
Six flavours, one small kitchen in Fenelon Falls. Every bottle is 5 oz (150 ml), fermented in barrels for 14 to 21 days, and filled, capped and labelled by hand. When a batch sells out, it stays sold out until the next one is ready — no rushing a ferment.
All six sauces are gluten-free, keto-friendly and vegetarian, and every one is sweetened the same way — a dash of honey and Stevia In The Raw, never sugar syrups. And for the record: there's no whiskey in any of them. The name is a promise about the smooth burn, not the ingredient list.

Heat · Hot
The Original's blend with the ratio swung hard toward the bonnets. Every bit of the flavour, roughly double the consequence. It sells out first for a reason.
Heat · Mild
Our gentle one — bright, green jalapeño flavour with just enough warmth to wake a plate up. The mild entry that brought home first place at the CK Hot Sauce Expo, and the bottle that empties fastest at family tables.
Heat · Hot
The jalapeño with its gloves off. All that fresh green-pepper character, fermented the same patient way and blended to a heat that makes itself known. Made for eggs, tacos and anything off the grill.
Heat · Medium
Warm baking spice folded right into the ferment. It sounds like dessert and behaves like hot sauce — unreal on wings, ribs and anything that comes off the smoker.
Heat · Extreme
The small-batch heavyweight. Everything people love about the Cinnamon, turned up until it pushes back — our hottest bottle, made in the smallest runs, and priced like it.
A lot of hot sauce is peppers drowned in vinegar and bottled the same week. Ours sits in barrels for two to three weeks first, and that ferment builds the deep, rounded flavour the awards keep noticing — the heat arrives with something to say, not just something to prove.
Darby makes every batch herself, by hand, in our Fenelon Falls kitchen. Small batches mean the flavour stays consistent — and they mean when it's gone, it's gone until the next barrel is ready.
